There are also a selection of special ingredients that we don’t often use in our daily cooking. They are either rare and expensive that we only see them in high class hotels or restuarants, or we use them for special occasions, or from time to time when we want something different for a change. Some of these inexpensive special ingredients are getting more popular nowadays due to their nutritional values and unique tastes. In this chapter I’ll introduce the two finest and most expensive ingredients in Chinese cooking. Shark Fins Shark fins are one of the finest delicacies in Chinese food. They are dried in one of two forms - whole or shredded and formed into a square. The best are from Africa. Method for preparation: Wash shark fins and boil for 30 minutes Soak in cold water for 2 hours and remove rough skin. Simmer for another 3 hours and soak 4 hours in cold water. Remove soft bones, be careful not to break shark fin pieces. Change water and simmer for 3 hours. Soak again in cold water until soft Boil with fresh ginger for 1 ~ 2 times to remove smell from shark fins. Place in deep casserole, add chicken soup stock and steam for 1 hour. Do not use iron pot as shark fins will turn dark in color. Bird’s Nest Bird’s nest, one of the most delicate ingredients in Chinese cooking, is produced in Annam, Thailand and Singapore regions. The Annam bird’s nest is considered to be the best in both quality and color. Method for preparation: Soak bird’s nest for 3 ~ 4 hours in cold water, remove pinfeathers and foreign particles with a pincette, rinse well and soften in hot water. Place softened bird’s nest in soup stock seasoned with salt and cooking wine, steam for about 30 minutes and serve. Women generally have ~5% more body fat than men, but this should not discourage them from being as fit as they possibly can. As a trainer, I come in contact with several female clients who are discouraged about certain part of their body. Often times, these clients are resigned to the fact that their hips, legs, belly, or booty will always be a problem because they are women. I have to remind them that like women, men also have their trouble areas (belly, love handles, etc.), but we dont have to let these trouble areas rule our workouts. And when you get there, you have to take charge of choosing whom you want to meet. To insure that you will actually get out of the house, make plans with a friend and mark it on your calendar. You need to go somewhere at least twice a week. Look in your local paper for events to attend. Take a class, join a club, volunteer your services, and participate in sports. Make a special effort to attend reunions, neighborhood parties, funerals, weddings, museum gatherings, dinner parties, and lectures. And when you get there, don’t just stand there waiting to be approached. Look around the room, see if there is someone interesting you would like to talk to, get near them, and ask them a question. You will know in a few minutes if you want to continue the conversation. Tell people you want to meet someone One of the most effective ways to accomplish anything in life is to network. Whether you are looking for a job, a plumber, or a florist…you ask other people who they know or where you should go. However, many people do not want to network to find someone. They feel embarrassed to ask people if they know someone who is single. Shift your attitude that this is beneath you and start thinking that this is a safe, effective, and smart way to increase your chances of meeting your Harry (or Sallie). But probably the best protection you can provide yourself is to set aside savings that will see you through a bout of unemployment, whether due to illness or job loss. So what if you die? First, you’ll be dead, so you won’t care if the bank gets paid or not. Second, if you have any estate at all, it will be up to your heirs to pay your outstanding bills if possible out of the proceeds of the estate. If your debt includes a car loan and the estate won’t cover it, your heirs have the option of turning the car in to the loan company. They absolutely will not be obligated to pay your bills out of their own money; if the estate can’t pay the bills, the creditors are up the creek, period. If you have a family, including a spouse and dependent children or aging parents, you should have a term insurance policy in place that will cover any outstanding debt plus money for living expenses for a period of time to be determined by you. Term insurance is a much better deal than loan insurance. How to Up-Sell Change

By Kelly O’Brien As Freud cautioned, it’s insanity to keep doing the same thing and expect different results. You know things have to change. Business as usual is a guarantee to fail. Your boss supports you, but is fairly lukewarm about resources and time commitments. Your staff agrees but then claim they are too busy. Activity traps, inertia, disinterest, ambivalence, fear people fabricate (consciously or unconsciously) lots of reasons to avoid making change. This is a frequent organizational dilemma: a needed change stalls before you even get started. Unless you’re willing to wait for a crisis (that usually means someone gets fired), start thinking about “up-selling” change. “Up-selling” change means to persuade your employees that making a personal commitment to the change will reap them personal benefits. Similar to up-selling your customers by informing and sharing the value-add to your products or services, you need to demonstrate the value-add of your change initiative. Just like any business problem, you start by making the business case for change. Except in this situation, your employees become your target market. So, you better have a good answer to the “WIIFM” test - What’s In It For Me? Even if you don’t know the answer now, don’t let that stop you. The best place to start looking for answers to that question is your employees. Go to them and get them involved in your thinking. The act of asking and listening not only engages them, but informs them as well. When people feel partially informed, not part of the “in the know” group, uncertain of what is really happening, and have no clear answer to “what’s in it for me?” you are guaranteed to face stiff resistance to change. The act of engaging employees early on in the change process will accelerate acceptance and learning at a pace most managers would be thrilled to achieve. Weave people into your change plans - their buy-in, their reactions, their learning curve, their commitment (or lack of) to adopting the change. Don’t bother to “up-sell” change without first administering the “WIIFM” test. The test is really rather simple. First, do a quick check of your team’s vital signs. Walk around and randomly ask people questions like “So, what do you think of the changes we’ve been talking about?” “How do you think it will impact your job?” “Think you’ll be able to adapt quickly to the new system?” You’ll be surprised (and maybe pleased) with the feedback you get. If your employees can articulate a positive connection to their daily job performance, then you’ve passed the test. On the other hand, if you get answers that vary widely across the board, or responses like “what change are you talking about?” “I hope it’s not like last time” or “we’re so burnt out now, I don’t think we can handle another change,” you have some serious remedial change management work to do. If you pass the “WIIFM” test, then your communications have “connected-the-dots” for your team in ways they can understand and absorb into their daily job functions. If you hear resistance to the change, you need to go back and literally reconnect-the-dots for your employees so that they can clearly understand how the change directly or indirectly will impact their job. You can never over-communicate during a change initiative. Continuous, repeated, and rapid information exchange and knowledge sharing are key to successful adoption of change. If you’re sick of talking about it, you’ve probably converted your true believers but have only reached 25% of your people. Talk it up some more and keep “up-selling” the change. Holiday 2005 Make Up Tips

By Lynn Starner There are some great new looks out this fall and holiday season. If youre planning on going out, youre probably looking for a new or different look. Ive compiled several of my favorite styles for this season to help you choose the one that will best fit your situation and needs. Focus On The Lips This look is all about your lips. Whether you use a bright jeweled lip color or a matte frost, remember to use a gemstone color. Theyre hot this season. Amethyst, ruby, gold, garnet, plum, etc. are all great colors. Try to use a color a few shades darker than your usual lip color. Dont do much else but add mascara to your top lashes only. This look is complimented by loads of mascara. You can also add a neutral color to the crease of your eyelid. (The crease of the eyelid is becoming a popular style.) Line It Up Do you love eyeliner? Looking for something new and exotic? This is the holiday make up tip for you. Its all about eyeliner. Using a dark eyeliner pencil, lightly trace where you want your liner on both the top and bottom lids. Then take black eyeshadow and mix it with a little hydrosol, water, visine, etc. Using a thin eyeliner brush, dip it in your creamy eyeshadow mixture and trace over the eyeliner pencil line. Keep your line very thin. Youll find its easier to trace over the line than to do it freehand. Now for the fun part. Youll see a space where your top and bottom lashes meet. Place your eyeliner brush there and draw it outwards. Make a curve as you pull it away. Youll get a cat eye look and your line will go from thick to thin. Youll get perfect placement every time. Then add some baby pink blush just to the apples of your cheeks. Using a brush the same size of the apples of your cheeks works best. Smile and place your brush against your apple. Does it look too big, too small or just right? Youll be able to tell when youve got it right. Tap the excess blush off and tap it onto the apples of your cheeks. Its easier if youre smiling while you do this. Dust your brush off on a piece of tissue then gently blend the blush back towards your ear a bit. For your lips, avoid the gloss. Use a matte or a matte frost in the now popular color of pink with tan undertones. The Red Lip Yes, the red lip is back in vogue. And you can wear this awesome look too. Its red and its matte and its gorgeous. You can go two ways with this look. 1. Red matte lips and nothing else. 2. Red matte lips and exotic eyes. For lipstick try a blue-red. Itll make your teeth look whiter compared to an orange or brown red. Berry colors are usually a winning color. For the eyes, youll have a smudgey look using either jewel tones or matte. Remember not to mix them! One or the other. Apply vibrant gold, copper, chestnut or bronze over the entire eyelid and smudge it below the eye. Dont use black, gray or charcoal for this look. Use a rich dark brown eyeliner (no black!) and draw a thin line on the top and bottom lashes and if you like, line inside the eye. Then smudge the eyeliner so its still a visible line, but smudgey. No blush for this look. And there you go! Youve got three of this seasons hottest styles to help you look your very best for all those holiday parties.
